Vegetables are sexy

So a plump tomato and a spicy red long pepper laying next to each other in a dish should have a PG13 rating!

From soup to  pasta sauce these two are delicious as they are good for you.

Cooked tomatoes:Tomatoes are a good source of lycopene, which is an antioxidant that might reduce your risk of heart disease, cancer and macular degeneration. The cooking process brings out more of the lycopene in tomatoes, making the cooked variety a significant source of the antioxidant


Peppers:The health benefit comes from capsaicin (pronounced kap-say-sin), the same compound that makes chili peppers like cayennes, jalapenos, and habaneros so hot.

I try to add these two lovelies to my dishes daily to keep my plate happy. Now that I have Type 2 Diabetes  I am adding as many flavorful  and nutrient dense vegetables as possible to each meal.
